Veg breakfast

I’m totally pleased with myself. Normally when I get up later than nine thirty or ten, I end up eating breakfast food around lunch time and skipping lunch, which means no veggies. But today I’ve found a solution to that problem. I made sweet breakfast food: a strawberry-yogurt smoothie (with flaxseed oil for omega-3s) and cereal, and also savory food: veggie breakfast sausage, a fried egg, and–here’s the clincher ;b–a stir-fry of summer squash, red onion, mushrooms and avocado. I’m eating it now and it’s really good, so now I’ll be able to have brunch on late-wake-up mornings and know that I’m still not skipping a serving of vegetables. 😀 😀 😀
